Het domein ontleent zijn naam aan ‘Petit Simon’ – de vroegere wijnbouwer die op 20 jarige leeftijd tijdens zijn huwelijk werd neergebliksemd. De cepage is 100% bourboulenc hetgeen een unicum is. Vroeger werd deze druif vooral aangeplant voor de vermouth Noilly Prat. |

| Na een carrière als politiek journalist werd de Amerikaan Blair Pethel gegrepen door de wijnmicrobe tijdens zijn vele trips naar Bourgogne. Enkele jaren geleden verstigde hij zich met zijn familie in Bourgogne en wilde izjn grote droom realisere: wijnbouwer worden. Na een opleiding bij enkele top Bourgogne makers begon hij in 2004 zelf kwaliteitsvolle Bourgognes te maken. |

| Als gepassioneerd voorstander van bio-dynamie staat Olivier Humbrecht zeker in de galerij van de beste wijnmakers ter wereld. Zijn wijnen krijgen steeds de hoogste ratings in blindproeven (R.P. 95, 96,...). Zijn geheimen zijn o.a. kleine rendementen (max 40hl/ha), optimale rijpheid, een lange oogstperiode en een zachte persing tussen 25 en 48 uur per wijn. De rijkdom komt van de druiven. Chaptalisatie (toevoeging van suiker) is uit den boze. In Clos Windsbuhl kunnen tractors niet op de wijngaarden. Daar wordt het werk verricht door paarden. Rangen de Thann wordt terecht 'Le Montrachet d'Alsace' genoemd. |

De wijn wordt vroegtijdig gebotteld eind augustus om de fruitige aroma's te bewaren. Het resultaat is een zuivere, delicate muscat die fris en jong wordt geserveerd. |

| De “Cassone Winery” is een kleine bodega gelegen in Luján de Cuyo, het zuidwesten van de provincie Mendoza. Familia Cassone met vader Eduardo en zijn 3 zonen hebben hun roots in Piemonte (Italië). Het is een “small cap winery” maar de kwaliteit is des te groter. Hun slogan is het produceren van pure, zuivere , rechtlijnige en gave wijnen zonder veel franjes. Bovendien hebben de 90-jaar oude wijnstokken extreem lage rendementen wat de kwaliteit zeker ten goede komt. De “wine-consulting” wordt gedaan door de oenoloog van Antinori namelijk Alberto Antonini in samenwerking met de “wine-maker” Roberto de la Mota, de meest gelauwerde Argentijnse oenoloog van het ogenblik. |
